Strawberry Protein Pancakes

I’m training for a 4-mile run and so I’ve been running, lifting weights, and practicing lots of yoga lately. With all the extra morning workouts I’ve needed a quick breakfast that would also refuel my body. And most importantly it needed to be tasty.

Enter Strawberry Protein Pancakes. They hit all the marks for a good post-workout breakfast. High protein? Check. Fiber? Check? Fruit? Check. Healthy Fat? Check. Quick, Tasty, and Easy? Check, Check and Check!

Strawberry Protein Pancakes

1 Small Banana Smashed

1 Large Chicken or Duck Egg

1/2 tsp Cinnamon

2 Heaping Scoops NorCal Organic Unflavored Pea Protein*

A Pinch of Baking Powder

A Splash of Vanilla

1/4 cup Chopped Strawberries

Additional 3/4 Cups Strawberries to add on top

Instructions

  1. Mix all ingredients except for the additional strawberries together in a bowl.

  2. Heat a skillet on medium-low heat.

  3. When the skillet is ready, add a small amount of coconut oil or another healthy oil of choice. Pour half the batter into pan and let cook. When the pancake is bubbly flip and cook for another 2 minutes or until cooked through. Repeat for the rest of the batter.

  4. Serve with additional strawberries and a drizzle of maple syrup, about 1 tablespoon.

  5. Enjoy, beautiful!

Tip- These pancakes turn out best when you cook them low and slow. Make sure your pan isn’t too hot and you will get the perfect pancake.
